Cherry Tomato Salad (No COOKING…ONLY Eating)

Cherry Tomato Salad-1

Who wants to cook this weekend? NO ONE!!!

This recipe is fast, easy, healthy, the perfect summer side dish, and as per the usual, it requires ZERO cooking.

Grocery Store List: Red and Yellow Cherry Tomatoes, Cantaloupe, Avocado, Mozzarella, Basil,

 & Red Wine Vinegar.

Joslyn’s Secret (Okay Not-So-Secret) Addition: Garlic Salt. I cannot stop using this in everything. It makes this less healthy…but so good.

Ingredients (4) -2

Measurements: Serves 4

  • 1/2 of a cantaloupe
  • 1 avocado
  • 1 cup of cherry tomatoes
  • 1 cup of yellow cherry tomatoes
  • 1 cup of mozzarella
  • 1/2 cup of red wine vinegar
  • Basil

(These are just guidelines. You can put as much as you want!)

Prep:

  • Cut cantaloupe in half. Then scoop the cantaloupe using a melon baller.
  • Also using the melon baller scoop the avocado and the mozzarella.

WARNING: Using a melon baller is a lot harder than it looks. It takes a few tries to get the hang of it. You don’t have to use the melon baller, but it makes the salad look super cute!

PS: Is is super immature that I love saying melon baller? 

  • Wash the cherry tomatoes and put them into a bowl with the cantaloupe, avocado, and the mozzarella.
  • Chop up the basil and mix it into the bowl with the red wine vinegar.
  • Refrigerate until ready to serve.
